博山是淄博的一個縣,據說淄博就是從臨淄與博山兩個轄地名中提取出來的,臨淄是齊國的首都,我去過,博山就沒有去,唯其有吃,至少在淄博問起人來,貴地有何可吃,他們必言博山。噢,博山人會弄吃的。這是十分的奇異,因為在淄博所轄的縣區中,博山人獨善吃,邊上的人幾乎是一個名菜都沒有發明出來,其實是應該慚愧的。
博山人的吃,大抵上也是平民菜肴,如燴菜、豆腐廂子等等,仿佛也是不入正席的。然對於好吃之徒而言,這邊緣化的菜譜,或曰愈是民間化的事物,它的變異性愈少,純樸之特質愈多。故淄博人,皆吃博山菜。我是在張店吃的。…

壽光是聞名於世的中國蔬菜之鄉,屬濰坊,縣級農業大市,東臨萊州灣,有小清河從境內流過,地理特征屬黃河沖積與海相沈積區域,於八十年代始由傳統小麥種植轉向專業蔬菜種植。在著名的蔬菜之鄉小飲,心思在菜。菜字在拆字學意義上可視為采草為菜,估計先人是看中素食。但魚羊為鮮,羊大為美,則又表明先人亦看重魚肉之鮮美的。我也以為。以鹹魚煮湯,似有悖魚鮮之現實主義審味意趣。從歷史沿續性來考察中國的湯文化,似乎是存在著兩條湯的發展路線,一為鮮,如鯽魚湯、鮑魚湯、蛤蜊湯,山雉脯氽湯等是為鮮湯之代表;一為醇,如全羊湯、火腿湯、臘肉湯、排骨湯等是為醇湯之代表。…
