客家糍粑
在梅州客家地區,每逢傳統節日或家庭喜慶,都有做糍粑的習俗。糍粑的制法是:取上等糯谷,最好是殼薄質軟的紅谷糯,經加工成白凈的糯米。用清水把糯米浸透,放進木甑裏蒸糯米飯。再放進石臼裏,用杵槌舂制而成。因此,客家人把做糍粑叫“打糍粑”。舂糍粑的杵槌,要用光滑的木杵,糯米飯粒便粘不住。經過用力舂搗,使之成羹狀,然後做成如雞蛋般大小的糍粑。蘸上炒米、花生、芝麻、黃糖等配制的作料粉,吃起來柔韌鮮滑,香甜可口。客家農村有句俗話:“十月朝,糍粑子碌碌燒。”說的是每逢農歷十月初一,家家戶戶做的糍粑熱氣騰騰。

泡糯米
將糯米放在水中浸泡一天以上,把糯米中的水分濾幹。
蒸制
把泡好濾幹的糯米置於木甑裏蒸熟。
