文化有根 創意是伴 Bridging Creativity
提起無錫肉骨頭,我首先要埋怨主持《新晚菜單》1的那位先生,我讀了他的報道後就去「按圖索驥」,一連跑了好幾家「上海店」都買不到。後來到了中環街市對面的那家「三陽」,他們的雪櫃裡分明還有,可是當我向他們買時,他們竟欺負我這個「外江佬」,說那些是給「熟客」定下的,這只怪我平時不曾同他們打下交情,有何話說,只好廢然而返。
幸虧我前年還到過無錫,在太湖飯店住了兩天,至少已經吃過兩次道地的無錫肉骨頭,餘香猶在,這次「走雞」也罷。只是希望下次有貨到港時,主持「菜單」的先生能及早報道,若是能順手給我買兩包,存在「老編」2處,那就更佳,免得我再去「拋頭露面」的受氣,一定除了貨價之外,再奉送車錢也。…

我時常說起,以蹄餚著名的鎮江,當地茶樓所賣的白湯麵也極有名,可惜在外地不易吃得到。最近才知道,新近在羊城開設的江蘇餐廳,他們不僅有「餚」賣,更有白湯麵賣。早市供應的餚肉白湯麵,每碗五毛。五毛本是一客普通客飯的價錢。一碗麵也是五毛,可知那質量一定是很不錯的。
江蘇餐廳也是開設在廣大路的地方小吃店之一,但是規模較大,有三開間門面,因此供應的品種就包括了小吃、麵點,以至菜餚。省境內的幾種著名點心和菜餚,他們都常備供應,從紅燒划水,醃篤鮮,以至獅子頭,還有揚鎮點心,無不應有盡有。他們的木牌上也有「百葉翅筋」名目,問了一下,卻說目前暫不供應。…

近日報上已有鰓魚上市的廣告。江南鰣魚,首推產於鎮江江面者,近讀番禺屈氏的《粵東詩話》,也盛稱焦山鰣魚之美。
丙子初夏客金陵,同社欲擇地為鰣魚之會,予曰,漁洋詩云:鰣魚出水浪花圓,北固樓頭四月天。何等雅致,何不雅集焦山枕山閣乎,眾稱妙。時漁者放舟象焦兩山間,得數尾,即烹而食之,鮮腴冠平生所嘗。群賢稱快。此一事也,翁山詩稱鰣魚以甘竹灘所產櫻桃頰者為最佳,此又一事也。學海堂詩課,嘗以鰣魚命題,劉彤卷頷聯,傳誦一時,吾粵人視之,以為白日風塵馳驛騎,炎天冰雪護江船一聯,不能專美矣,此又一事也。言鰣魚故實者,或亦樂道之。 …
