文化有根 創意是伴 Bridging Creativity
近日報上已有鰓魚上市的廣告。江南鰣魚,首推產於鎮江江面者,近讀番禺屈氏的《粵東詩話》,也盛稱焦山鰣魚之美。
丙子初夏客金陵,同社欲擇地為鰣魚之會,予曰,漁洋詩云:鰣魚出水浪花圓,北固樓頭四月天。何等雅致,何不雅集焦山枕山閣乎,眾稱妙。時漁者放舟象焦兩山間,得數尾,即烹而食之,鮮腴冠平生所嘗。群賢稱快。此一事也,翁山詩稱鰣魚以甘竹灘所產櫻桃頰者為最佳,此又一事也。學海堂詩課,嘗以鰣魚命題,劉彤卷頷聯,傳誦一時,吾粵人視之,以為白日風塵馳驛騎,炎天冰雪護江船一聯,不能專美矣,此又一事也。言鰣魚故實者,或亦樂道之。
所謂劉彤鰣魚詩最受人傳誦的一聯,據同書所載,為「新灘甘竹水,涼雨苦瓜時。」甘竹灘在順德,即屈翁山在《廣東新語》中所稱產櫻桃頰鰣魚的地點。鰣魚在廣東又名三鱺。廣東食譜以苦瓜煮三鱺為一名撰,所以劉詩有「涼雨苦瓜時」之句。至於「炎天冰雪護江船」,則是在滿清時代,長江鰣魚初上市時,列為貢品,由地方官將漁船最初網得的鰣魚呈封疆大吏,再由大吏以快馬馳驛入貢京師,由皇帝薦諸太廟,然後臣下和老百姓才敢隨便購食。鰣魚貴新鮮,在初夏天氣要用藏在地窖裡的天然冰塊來覆蓋,所以有「炎天冰雪護江船」之句。
我不大喜食鰣魚,因此詩人所艷稱的鎮江江中鰣魚滋味之美,雖然嚐過,卻不大能道出究竟。年輕時家居鎮江,在一家教會所辦的中學唸書,大哥則在鎮江海關任職,同沿江一帶的艇戶漁家非常熟識,鰣魚初上市時,往往能優先受到他們的饋贈,用竹籃盛了,上下護以柳葉。最好的吃法是用豬網油裹了來清蒸,加上幾片上好的火腿,滋味據說非常腴嫩,尤其是魚鱗下面所含的脂肪。可是我不喜肥膩,吃魚只喜歡吃桂魚一類少刺的魚,又只喜歡吃魚背,因此,雖然住過長江出產鰣魚最好的地點,也吃過最新鮮的鰣魚,卻辜負了它,不能完全欣賞它的美味。
