探索漁村,從吃魚開始……
在島嶼南方,有一道這樣的漁夫料理:從魚塭裡撈來長約十五公分大小的虱目魚,除去鱗片取出內臟洗淨後,十來條魚一起下鍋,淋上醬油加入薑片燉煮,等到魚肉悶煮到軟嫩入口即化之際,來上一大碗的地瓜稀飯,配上兩條魚,就是漁民美好的一餐。
二○○七年,我在台南七股鄉十份村參與地方文化紀錄工作的時候,便常跟著老漁夫們這樣吃。如果您也有機會同漁夫們吃魚,你會發現,看漁夫吃魚是很件很過癮的事!他們夾起整尾的魚往嘴裡送,最先入口的是魚頭,只要簡單幾下吸吮的動作,魚頭便化成零散的骨頭。
漁民們說虱目魚臉頰那兩片豐厚富含膠質的油脂最好吃,懂得吃魚的人都是從臉頰先吃。…
