文化有根 創意是伴 Bridging Creativity
餐飲業也是一門文化創意產業。飲食的學問越來越大,越來越講究,是社會進步的象征。它意味著我們不再只是要求吃得飽,吃得好,還要吃得有個心靈的感受。
不只要求口腔舌喉的味道,還盼望心裡頭的味道;不只是味蕾的美味,還要性靈的美感。
最常見的,就是餐桌、餐盤的擺設裝飾,在味覺、嗅覺以外,再經營視覺、觸覺的氛圍。在西方,蔬果、冰塊、乳酪和牛油,都是飲食界發揮創意,創造美學價值的好材料。連草莓、鳳梨、芋頭、蜜瓜、南瓜與番薯都派上用場。
做大廚的個個至少都是蔬果雕刻的藝術家,否則他們永遠只能當大廚的副手。
近年來,蔬果雕刻也在中國大陸受到推崇。這其實已經不是新的玩意兒,早在古代的周朝就已經出現,倒了清朝康熙當政,那滿漢全席道道佳肴都有蔬果雕刻的點綴。
可惜的是直到今天,廚師們所采用的材料,來來去去是那些冬瓜、紅蘿卜,題材也離不開傳統的龍鳳、老鷹。
來參考西方的一些蔬果、食物的裝璜,洋人叫這food architect, 已經提高到建築學、工程學那高度了。也有人說這活動是edible creation 或edible craft,可吃的創作或手藝,不簡單吶。(陳明發博士 撰)
