文化有根 創意是伴 Bridging Creativity
居住在海邊的人,常常可以吃到大海提供的各種海鮮,其中數量最多最常見的要算蛤蜊了。蛤蜊價廉而味美,烹制起來簡單,吃起來方便,深受大眾喜愛,是尋常人家餐桌上備受青睞的美味。
離我家不遠處有一片海灘,上中學的時候,每逢落大潮,人們便成群結隊地前去挖蛤蜊。時間一般是半夜,男女老少挎著籃子,拎著口袋,沿著大路向海邊匯聚。燈火漸漸匯作一處,如長龍般蜿蜒前進。來到海灘後,四下撒開,釘耙、鐵鍬、簸箕一起忙活,極像大生產的集體勞動場面。一晚上下來,有經驗的人怎麽也得收獲百十來斤吧,即使生手操著簡單的工具也能挖個十幾斤。帶回去除分給鄰居和朋友,剩下的也夠吃上幾天,實在吃不了,便將蛤肉晾制成乾品,留待以後慢慢食用。
蛤蜊,一名海蛤或文蛤。或白殼紫唇,或殼上有花紋,故稱文蛤或花蛤。形圓, 大小不等。蛤蜊不但味鮮美而且營養豐富,其肉及殼均入藥。李時珍《本草綱目》中就提出蛤蜊肉有潤五臟、止消渴、軟堅散腫的療效。殼粉則對咳逆上氣、項下癭瘤、搐溺抽風、心氣疼痛等有治療作用。
蛤蜊制成的藥膳相當多。如蛤蜊麥門冬湯對腦力衰退、遺精盜汗有療效;川芎蛤蜊湯有益智健身、防治神經衰弱的作用。為大眾所喜愛的蛤蜊菜肴各地更為豐富,如烤蛤蜊、芙蓉蛤蜊、蛤蜊薺菜湯、蛤蜊冬瓜湯、蛤蜊鯽魚、蛤蜊黃魚羹等。
蛤蜊黃魚羹是浙江寧波一道頗負盛名的風味菜肴。在寧波人們喜歡黃魚制作的菜肴,通常將黃魚去皮去骨,切為丁,加其他配料和鮮湯,烹制為羹。蛤蜊黃魚羹取用蛤蜊與黃魚肉制成,色澤潔白,湯汁濃稠,近百年來盛行於浙江和上海等地,是宴席上的上品佳肴。黃魚乃魚中佳品,蛤蜊則有“天下第一鮮”的美譽,二者搭配,其美味自是非同尋常。
蛤蜊黃魚羹的制作方法為:洗凈的蛤蜊放入鹽水中養兩小時左右,使它吐凈泥沙,取出,入沸水鍋,待蛤蜊殼略張開時撈出,剝殼取肉。將黃魚肉切成丁,雞蛋打成蛋液。炒鍋燒熱,放入熟豬油,燒至五成熱時,下蔥末、魚丁煸一下,隨即放入酒、鹽和肉湯。湯沸後,撇去浮沫,加入味精,用濕澱粉調稀勾芡。放入蛤蜊肉,用炒勺輕輕攪一下,淋雞蛋清、豬油,用炒勺輕輕推一下,出鍋裝盆,撒上火腿末、蔥末即成。
