文化有根 創意是伴 Bridging Creativity
偶然經過一家外國伙食公司,見到他們所售的自外國運來的生菜和芹菜,這種在本地市場上只售兩三毛錢一斤的東西,放在他們冷藏櫃裡,售價竟在十多倍以上。雖然品種有點不同,而且又遠自外洋運來,但是價錢貴成這樣,果真表示它們與本地產品在滋味或是營養價值上有這樣的懸殊嗎?
我不曾親自買回來比較過,不想在這裡下斷語,但是就市上有一種售價相當高的「西芹」來說,我就覺得它的滋味遠不及我們原有的芹菜。
我是喜歡吃芹菜的,而且我的家鄉也以產芹菜著名。那是一種稱為「白芹」的芹菜,比普通的芹菜小而細嫩,莖是白色的,有一種清香。白芹炒燒鴨絲,是我們家鄉菜餚中的一味雋品。陳作霖的《金陵物產風土志》記家鄉的蔬菜說:…

這幾天,在我們家鄉,會有一種新上市的蘿蔔,小而且圓,外紅裡白,只比櫻桃略大,園丁將它們連蘿蔔纓紮在一起,十幾顆紮成一把,洗乾淨了上市出售,又紅又綠,色彩極為鮮艷,稱為「楊花蘿蔔」。因為是時蔬,初上市的時候價錢頗不便宜。這種蘿蔔只宜生吃。因為小,並不需用刀切,只要用刀將它整個拍破,加糖醋醬麻油涼拌,像吃西菜的沙律那樣,很爽脆可口。西菜裡彷彿也有這種小紅蘿蔔,將皮削去一半,只用一兩枚放在盆邊作點綴,不像我們將它當作春天很珍貴的時蔬。
它們所以稱為「楊花蘿蔔」,大約因為是在楊花季節上市的原故。另有一種較大的外紅裡白的蘿蔔,也是圓形的,那就不僅我們家鄉有,在江南一帶,一直到北方,都有這種紅蘿蔔。近年有一部彩色的卡通片,名為《蘿蔔回來了》,主角就是這種圓形的外紅裡白的紅蘿蔔。…
