巴黎有六百多家咖啡館，如果沒有它們，巴黎就不是巴黎了。
而歷史悠久的咖啡館有好幾家，圓亭(La Rotonde)、圓頂 (Le Dome)及穹頂(La Coupole)是構成巴黎畫派及巴黎文化的重要據點，而普羅科普(Café Procope)，就在拉丁區邊緣靠近奧迪安廣場的舊喜劇院路上。
1990年代因破產，幸虧得到餐館業布朗家族昆仲的伸出援手得以繼續經營，夏克‧布朗說：
“我們對普羅科普一見鍾情，它是文化的搖籃，孟德斯鳩和伏爾泰常在那裡與朋友見面，我們不能讓有歷史價值和美食重要性的紀念地就此消失。”
