What I stumbled upon was having the students use bluetooth communication to create remote controls for their robots and to then battle with them. I simply call it Battle Bots. I operate my Battle Bots very similarly to Sumo Bots with one important distinction: Battle Bots are remote controlled by a second EV3 brick using Bluetooth communication.
