東興樓又一名饌曰烏魚錢。做法簡單,江浙館皆優為之,而在北平東興樓最擅勝場。
烏魚就是墨魚,亦稱烏賊。不是我們這裏盛產烏魚子的烏魚。俗謂烏魚蛋,因蛋字不雅,以其小小圓圓薄薄的形狀似制錢,故稱烏魚錢。而事實上也不是蛋,魚卵哪有這樣大?誰又有本領把它切得那樣薄,那樣勻?我一直以為那是蛋,有一年在青島順興樓飲宴,上了這樣一碗羹,皆誇味美,座中有一位曾省教授,是研究海洋魚產的專家,他說這是烏賊的子宮,等於包著魚卵的胞衣,曬幹之後就成了片片的形狀,我這才恍然大悟。
烏魚錢制羹,要用清澈的高湯。魚錢發好,洗凈入沸湯煮熟,略勾粉芡,但勿過稠,臨上桌時撒芫荽末、胡椒粉,加少許醋,使微酸,殺腥氣。
