從小愛入廚,對菜刀也十分著迷。
在香港,哪裏可以找到一把完美的菜刀?答案是:“陳枝記老刀店。”
不像西洋菜刀要分多把,在中國基本上有兩把就夠,一把切菜,一把切肉。“陳枝記”的招牌菜刀有兩種,木柄的和鋼柄的,任君選擇,一般人認為木柄用久了會脫掉,也有人說木柄的抓起來沒有鋼柄那麽滑手,這也是喜歡和用慣之分別罷了。
切菜的刀刀身較薄,切肉的較厚,有人只用厚身那把兼用來切菜,成為萬能刀。
中國菜刀和日本菜刀最大的不同,是前者兩面都利,而日本的只磨利一邊,用左手的就要特別訂造一把了。
店裏兼賣各種廚具,我最慣用的是陳枝記特制的生鐵鑊,坊間的易潔鑊固佳,但用久了化學物剝脫,吃進肚裏不是一件好事,要炒菜,我還是主張用生鐵鑊,它是鑄出來的,不是一塊鐵由模子壓出來,所以底部可以鑄得較厚,保熱均勻,是最大的特點。
陳枝記店裏不止賣菜刀,只要你能想到關於利刃的產品,他們都有。
奇怪又特別的,是專門造來切面的大刀。還有陳老板手中抓的屠牛刀,足足有十斤重,一刀斬下,就能將牛砍為兩半,問你是不是犀利?
